Here is my award winning Dawn Chicken recipe. I was so excited in late 2010 to be able to cook this recipe on live TV on Atlanta and Company. I hate to admit it but I loved being in front of the TV cameras and didn't want to leave.. how vain right? Anyway..here you go..
Dawn Chicken
You will need to have a large fry pan with 1 stick of butter melting. ( I never said it would be guilt free.. just wait .. the best is yet to come). Chop 1 onion and 4 cloves of garlic. Put them in the melted butter. Place 4 -6 chicken breast in the pan.. cook them for 3 minutes on each side. Put the unfinished chicken in a casserole dish.,, but leave the butter and onions in the pan. Pour 1 container of fresh chopped mushrooms over the chicken. in the pan of melted butter add 2T. of flour.. orrrr if you are like me and have Celiac, add 2T. of gluten free bisquick pancake mix. stir it up and add 2 C. of white wine. Stir until thick.. then add 2 C. of heavy cream. Seriously.. not a dish for every day.. if you are trying to watch your weight then just add the same amount of fat free half and half.. Cook that until thick and add 2 C. grated swiss cheese.. .. turn the stove off and stir that in until it is melted.. add salt and white pepper to taste. Pour this mixture of delishesness over the chicken and bake on 350 for 30 minutes... the top should be all bubbly and brown.... eat up.. and remember.. you are loved.
For the vegetarians, you can use vegetarian scallops or fry chick..
