The other day I woke up early and decided to get in the kitchen before work... I looked in my fridge, in the cupboard and here is what I came up with..If you don't have herb infused olive oils.. get some.. if you don't want to get some.. it's ok..it won't be as delish as this recipe.. but it will do....
Chop 1 large onion, 4 cloves of garlic, and saute in 1/4 c. Tuscan herb olive oil until onions are tender. Put 4 chicken breasts in the mix and saute for 2 minutes on each side... pour 1C. of white wine over the chicken and simmer on medium covered until the chicken is cooked through.. take the chicken out of the pan and put 1/3 C. chevre cheese and 2T. of Dijon mustard... Mix well.. and put the chicken back in.. cover and cook on low for 5 minutes or so... add salt and pepper.. serve over steamed Asparagus.
This is awesome because it is gluten free.. and dairy free... ENJOY.....Oh.. it is also VERY LOW CARB AND HIGH PROTEIN..
