Guys.. seriously.. you have GOT to try this... I just made some today.. Keep in mind if you don't want to use potatoes, you can use cooked cauliflower this will make it very low carb... it is already Gluten free and man oh man.. even left over till the next day you will feel like there is a party in your mouth..
1 bag of red potatoes / or 1 head of cauliflower
1 pint of fat free half and half
3 cups of grated swiss cheese
1 cup of shaved Parmesan Romano cheese
Nutmeg
Slice a bag of red potatoes.. I like to keep the peelings on.. ORRRRR cook and chop cauliflower ..If you don't cook the cauliflower first the au gratin will be watery..
Take a baking dish and pour 1/2 C. fat free half and half. layer the sliced potatoes or chopped cauliflower, top with a little salt, a couple shakes of nutmeg and some of each cheese.. just to cover the potatoes lightly.. put another dose of half and half.. more potatoes or cauliflower, salt pepper, nutmeg, both cheeses.. continue to layer everything until you pan is FULL.. make sure you top everything with the cheeses .. a generous topping of the cheeses.. if you need more than 3 cups go for it...
Bake on 350 ... If you are using the potatoes, bake for about 45 minutes.. if you are using the cooked cauliflower, bake for about 20 minutes or until the top is brown and bubbly... OMG this is the best dish ever and it will probably become your main dish instead of your side dish...
