Banana Cream Pie / Coconut cream pie

You know.. I have to admit.. I cheat a little with this one.. I buy a frozen deep dish crust  and bake that.... So if you are not into making your own crust.. feel free to do the same..

now I also cheat in the inside.. here is what you do.. it will be creamy for sure..Bake the shells and let cool...

take 2 pack of cook and serve Vanilla pudding.. If you use the instant pudding I will come to your house and slap you.. I really will

Ok.. take 2 packs of 3 oz. cook and serve vanilla pudding... take 3 cups of evaporated milk and 1 cup of regular milk... and cook until thick.. stirring constantly..

let it cool somewhat.. and put 1/2 pudding in a bowl.. with the pudding in the pan add 2/3 cup of coconut.. set aside.. in one of the pie shells put sliced bananas...

once the pudding is cooled put the pudding with the coconut in the empty shell and the plain pudding over the bananas...

Toast some coconut in the oven and set aside.. When it is time to serve the pies.. put whipped cream on top of each and top the coconut pie with the toasted coconut.. it looks so pretty and will be a crowd pleaser...
