Beef Stew

I love beef stew when it is cold outside.  It is a great Sunday afternoon meal.. and trust me.. it is a meal.... Here you go..

Beef cut for stew
1 large onion
4 carrots
2 stalks of celery
red potatoes (Unless you are low carb, then put in cauliflower)
Italian Seasoning
2 bay leaves
4 cloves of garlic
1 bottle of red wine.. it doesn't matter which kind.. unless you want to sip and cook..lol....
2 cups of beef broth

Heat up 3Tb. of olive oil in a pot.  Add the sliced onions and saute until tender.. put in the beef chunks and stir and cook for a couple of minutes.  Put in the celery, and Carrots and seasonings, salt and pepper... cover with the entire bottle of red wine and beef broth.  Cover and simmer for 45 minutes.  Don't cook it too fast, just nice and slow.. on medium.. Put in the potatoes or cauliflower and cover and simmer another 20 minutes.. the longer and slower you simmer the more tender the beef will be.  test the doneness by taking out a piece of beef.. if you can cut it with a fork, it is ready to eat.. salt and pepper to taste and OMG  you will have to go back for seconds... lolol Enjoy.. and know.. that you are loved!!
