I'm a HUGE fan of spring rolls... and that coconut peanut sauce is so good you could drink it or bathe in it... or both. Oh and I was not going for a #hashtag... all though that would have been cool... I am not at all sure what I was going for.. anyway.. here is the very easy recipe for the spring roll and sauce..
Cut up any and all veggies you want... get some shrimp, or smoked salmon, or cooked crab... basically what ever you love. Get some rice paper for wraps.. Set that all aside....
For the sauce, IF you have a ninja or something that can really make a smooth sauce, use that...
1 Can of unsweetened coconut milk
1 Cup of dry roasted peanuts
2 Tablespoons of smooth peanut butter
1/4 Cup of soy sauce
1 Tablespoon of fresh minced ginger (if you don't have fresh, well.. go get some.. lol.. jk.. use powdered)
1 Tablespoon of fresh garlic (again.... you can use powdered if you don't have fresh, but for the next time make sure you have fresh...)
Splash or two of Tabasco...
Now.. taste and ad what you think might be missing.. make it your own and enjoy.
Now.. to put the spring rolls together, run the rice paper under very warm water until pliable.. lay on a cutting board, fill with your veggies and protein.. roll them up (if you don't know how, go to youtube.. I am not doing videos just yet.. I will .. but not yet..) Dunk them in the sauce, and even pour some sauce into the spring roll as you eat it... ENJOY!!
