Loaded Potato Soup
Great for these cool nights... I took my mom's recipe.. and added a few extras..
Take one chopped onion, and three carrots cut into rounds, salt and pepper, and sauté' in butter for 5 min.... This will release the natural sugars. I like to use small red potatoes. Take 10-15 potatoes, wash them and cut in half and put them in the pot. Cover with water and boil until potatoes are tender, but not mooshy... Drain... then put them back into the pot. Mash the veggies but leave hearty chuncks of potato. Pour enough half and half to cover the mashed mix .. Ad 1/2 stick of butter, 1/2 cup of sour cream, salt and pepper. IF you want, you can ad cheddar cheese and make it a cheesey potato soup... top with green onions, cheddar cheese, and bacon... OHH MYYY YYUUMM
