This is so yummy.. I made this last week and took some into work... it is very basic, very easy and oh so healthy.. totally vegetarian, and Gluten FREE..... Here you go
Take what every vegetables you want... I highly suggest celery, carrots, onions, tomatoes, cauliflower, potatoes, green pepper, cabbage, garlic or what ever you want.. you don't even have to chop them up much... just clean them and put them in a large pot... Do not cover with water.. just add enough water come have way up the vegetables.. add salt and Italian seasoning... cover and cook.. you are practically steaming the vegetables.. when they are completely tender put them in a blender and pure' them.. put them back in the pot and season with more salt and pepper if needed.. The soup will be thick.. but if it is too thick just add some water. Once you are ready to serve, put a serving in a bowl and put a dab of sour cream on top and some grated Swiss cheese.... be generous with the cheese... If you don't want to use sour cream feel free to use some fat free half and half....
It is pure veggies and purely delish.. and with this colder weather it will warm your insides up just right...
