Well, this is about a week late... but here is my skillet breakfast casserole .. I have a picture on my FB page and it was really good... This is Gluten Free as well..
in a bowl mix
4 eggs,
2 cups of fat free half and half,
4 T. of GF bisquick pancake mix,
1 medium minced onions
1/2 c. each red, green, yellow peppers minced.
1 cup of hashbrowns.. uncooked.
1/2 C. Chevre Cheese crumbled.
Salt and Pepper
Mix well, and pour into a preheated cast iron pan that has been oiled well... Bake at 350 for 30-40 minutes...
