Keto Sushi ??  Say it isn't so... Ok I hear that quinoa has some carbs.. and if you are in the strict part of the keto diet then you may not want to make these.. BUT ... each sushi roll only has a touch of the quinoa because I mix it with cream cheese.. you see... if you don't, then the quinoa which doesn't have the starch of white rice ( yes, I know that is a dirty word)  so the quinoa just falls out of the sushi roll... so when you mix it with cream cheese it sticks.. then you can put what ever veggie... and protein you want in it.. oh btw.. didn't check the pickled ginger contents.. might be a good idea to do that.. however.  IF you want it gluten free as well as KETOOOOOO  use the La Choy soy sauce.. enjoy and be careful of any raw fish... just sayin.. it could end badly..
