Omelet for 2

Great Sunday Morning Breakfast.  
Heat some olive oil with two tablespoons of butter.  Saute chopped onion, yellow squash, smoked sausage.  While that is cooking, mix 5 eggs with 1/2 cup heavy cream, salt and pepper.  Add eggs to cooked veggies, and turn heat down to low.  Cover the pan.  When the eggs are getting thick flip the entire omelet, and cover with sharp cheddar cheese.  Cover until cheese is melted.. then fold in half.  Top with Brie Cheese and cover until the Brie is melted.  top with chives and serve hot..
